Easy Lemon Mushroom Risotto

Risotto with a great lemon taste.

  • 1 cup Arborio rice
  • 1/3 cup onion (chopped)
  • 1 cup fresh mushrooms (finely chopped)
  • 2 10.5 oz. can chicken broth
  • 2 Tbsp. lemon juice
  • 4 tsp. Molly McButter® Natural Butter Flavor Sprinkles
  • 1/2 cup frozen green peas (thawed)
  • 1 Tbsp. Parmesan cheese (grated)


Spray a microwave safe 8' (20cm) square baking dish with non-stick cooking spray. Combine rice, onion and mushrooms in prepared dish. Microwave on high for 5 minutes. Stir in broth and lemon juice and microwave for 8 minutes. Stir in Molly McButter® and peas and microwave for an additional 8 minutes. Stir and cover with plastic wrap. Let stand for 5 minutes, stirring occasionally. Sprinkle with Parmesan cheese, just before serving.
